Almond Milk "Yogurt"

Ingredients
  

  • 1 3/4 tsp agar powder
  • 1/4 cup water
  • 3 cups almond milk unflavored, unsweetened
  • 1 capsule probiotic 50-billion

Instructions
 

  • Adjust oven rack to middle position.
  • Sprinkle the agar agar powder over the water in a medium sized bowl and let sit until softened; about 10 minutes.
  • Heat the almond milk in a medium sized saucepan over medium-low heat until simmering. Mix in the softened agar agar and whisk constantly until it dissolves. Transfer mixture to a bowl and let cool until mixture reaches 110 degrees when checked with a food thermometer.
  • Twist open the probiotic capsule and whisk into the cooled milk mixture. Cover bowl with plastic wrap, place in the oven, and turn on oven light. Let yogurt sit undisturbed for at least 12 hours. Yogurt will NOT thicken while sitting.
  • Refrigerate yogurt until completely chilled and set, about 4 hours. Process yogurt in a blender until smooth. Yogurt can be refrigerated for up to 1 week.

Notes

Add in some fruit or muesli for some fun flavor and crunch.
