Black Bean and Avocado Burgers

Black Bean Patties

  • 4 tbsp Earth Balance butter divided
  • 1/2 cup onion diced
  • 2 cloves garlic finely chopped
  • 1 cup button mushrooms roughly chopped
  • 1 cup rolled oats
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 1 tsp black pepper fresh, cracked


  • 4 buns hamburger buns no bleached flour
  • 1/2 cup avocado mashed
  • 2 cup leafy greens
  • 4 tomato slices
  • 2 tbsp mayonnaise plant-based


  • Preheat the oven to 375 degrees.
  • In a medium sized pan over medium-high heat; melt 1 tablespoon of the butter. Saute the onions and garlic for about 7 minutes until tender and fragrant. Transfer to a large bowl.
  • Heat another tablespoon of the butter in the same skillet; add the mushrooms and cook until reduced and browned on all sides. Once cooked, transfer to the bowl with the onion-garlic mix.
  • In a food processor, pulse the oats until it has turned mostly to oat flour then transfer to the bowl. Put the black beans in the food processor and blend until mostly pureed with some whole beans remaining, for texture. Transfer to the bowl along with the smoked paprika, salt, and pepper. Mix together well to make sure everything is incorporated.
  • Form the mixture into 4 patties; transfer the patties to the pan and bake on a lined and buttered baking sheet for 20 minutes, flipping halfway through to prevent burning.
  • Once cooked, transfer the patties to a wire rack and let cool for a few minutes while you assemble your burger buns.
  • Take any remaining butter, and spread over the inside of the buns. In a large skillet, toast the inside of the buns till golden brown. Once toasted; remove from the pan and spread the mayo on the buns while still warm. Top with the leafy greens, mashed avocado, tomato slices, bean patties, and burger top. Enjoy!


Serves well with baked sweet potato fries.
