Cajun Tofu

Ingredients
  

  • 1 tbsp Low Sodium Soy Sauce NO SODIUM BENZOATE
  • 1 15oz Can of Diced Tomatoes
  • 2 cloves Garlic minced
  • 2 tbsp Green Onions minced
  • 1 tbsp Parsley minced
  • 1 tbsp Celery minced
  • 1/4 cup Green Bell Pepper minced
  • 1 tsp Olive Oil
  • 1 tsp Cajun Seasoning
  • 1 pound Extra Firm Tofu
  • 1 tsp Sea Salt

Instructions
 

  • Cut tofu into half-inch slices that are somewhat thick
  • Sprinkle both sides of the tofu with salt
  • Sprinkle both sides of the tofu with Cajun seasoning
  • Heat olive oil in a small saucepan, with medium heat
  • Add green bell pepper and celery
  • Cover and cook for 5 minutes
  • Add green onion and garlic, take the lid off and cook for another minute
  • Add tomatoes and stir
  • Add parsley, soy sauce, and the balance of salt and cajun seasoning stir whiling adding ingredients
  • Let simmer for 10 minutes
  • Add a pinch of olive oil to large skillet medium-high heat add tofu
  • Cook for 10 minutes or until brown
  • Add sauce and simmer for 5 minutes then serve
