Carrot Apple and Sweet Potato Hash

  • 3 cups sweet potato peeled, diced
  • 1 1/2 cups carrot peeled, chopped
  • 1 tbsp olive oil extra virgin, divided
  • 1 cup shallots thinly sliced
  • 1 1/2 cups apple peeled, diced
  • 1/2 tsp sea salt
  • 1/2 cup walnuts crushed, toasted


  • Preheat the oven to 425 degrees while you prepare a baking sheet with parchment paper.
  • Use a large bowl and add the chopped sweet potato, carrot, and a 1/2 tablespoon of olive oil; mix well.
  • Spread the mixture on the baking sheet then bake for 10 minutes.
  • Using a large pan on medium-high heat add the other half of the olive oil then saute the shallots for about 5 minutes. Add the apple and salt; toast for another 5 minutes.
  • Mix everything together along with the toasted walnuts in a large bowl before serving. Enjoy!
