Preheat the oven to 425 degrees while you prepare a baking sheet with parchment paper.
Use a large bowl and add the chopped sweet potato, carrot, and a 1/2 tablespoon of olive oil; mix well.
Spread the mixture on the baking sheet then bake for 10 minutes.
Using a large pan on medium-high heat add the other half of the olive oil then saute the shallots for about 5 minutes. Add the apple and salt; toast for another 5 minutes.
Mix everything together along with the toasted walnuts in a large bowl before serving. Enjoy!
