Cashew "Mozzarella"

Ingredients
  

  • 1 cup cashews raw, unsalted, soaked overnight
  • 4 tsp tapioca starch
  • 2 cloves garlic
  • 4 tbsp nutritional yeast
  • 3/4 tsp salt
  • 2 tsp lemon juice
  • 1/2 cup water

Instructions
 

  • Soak the cashews in water overnight. The next day, drain and rinse the cashews.
  • Place all ingredients in a food processor and blend until completely smooth while scraping down the sides till to make sure everything is incorporated.
  • Transfer to "cheese" to a saucepan and bring to medium heat. Stir until mixture begins to stretch and come together in a ball. Transfer to a airtight container, then place in fridge to let cool for at least 1 hour.
  • Slice the cashew "mozzarella" and use in a multitude of recipe including pizza, quesadillas, grilled "cheese" or however you would use regular mozzarella!
