Soak the cashews in water overnight. The next day, drain and rinse the cashews.
Place all ingredients in a food processor and blend until completely smooth while scraping down the sides till to make sure everything is incorporated.
Transfer to "cheese" to a saucepan and bring to medium heat. Stir until mixture begins to stretch and come together in a ball. Transfer to a airtight container, then place in fridge to let cool for at least 1 hour.
Slice the cashew "mozzarella" and use in a multitude of recipe including pizza, quesadillas, grilled "cheese" or however you would use regular mozzarella!
