Cauliflower Steaks with Saffron Mayo

  • 1 head cauliflower cut into 1' inch thick pieces
  • 2 tbsp olive oil extra virgin
  • 1/4 cup pine nuts toasted


  • 1/2 cup "mayonnaise" plant-based
  • 1/4 tsp saffron threads
  • 1 tsp water hot
  • 1/8 tsp salt
  • 1/8 tsp black pepper fresh cracked


  • Preheat the oven to 400 degrees while you line a baking sheet with parchment paper.
  • Brush both sides of cauliflower slices with olive oil then bake for 20 minutes until tender and lightly browned.
  • Mix together the saffron threads with the tsp of water until the water starts to change color. Make the dressing by mixing together the mayonnaise, saffron-water mix, salt and pepper.
  • Serve the baked cauliflower slices topped with a generous spoonful of the mayonnaise and a scattering of toasted pine nuts.
