Chickpea Tikka Masala

  • 1 tbsp olive oil extra virgin
  • 1 cup onion chopped
  • 3 cloves garlic minced
  • 1 tbsp ginger fresh, minced
  • 1 tbsp garam masala ground
  • 1 tsp cumin ground
  • 1 tsp coriander ground
  • 1 tsp salt
  • 1/4 tsp red pepper ground
  • 30 oz chickpeas canned, drained
  • 28 oz tomatoes canned, crushed
  • 13 oz soy milk
  • 12 oz tofu firm silken, drained, 1'cubes
  • 4 servings brown rice cooked
  • 4 tbsp cilantro fresh, chopped


  • Heat the olive oil in a large saucepan over medium-high heat then saute the onion and garlic for about 5 minutes.
  • Mix in the ginger, garam masala, cumin, coriander, salt, and red pepper; cook for about 1 minute.
  • Stir in the chickpeas, tomatoes, and soy milk; simmer for 30 minutes until chickpeas have softened slightly. Add in the tofu gently and continue to cook another 8 to 10 minutes.
  • Serve over cooked brown rice and garnished with cilantro. Enjoy!


Serves well with a piece of whole wheat Naan bread.
