  • 1 cup water
  • 14 oz can coconut milk
  • 1 1/2 cups brown rice
  • 1/3 cup coconut flakes
  • 1 tsp lime juice fresh squeezed, no sugar or preservatives
  • 1/2 tsp salt


  • In a large stock pot with a lid, combine water, coconut milk, and rice. Bring to a slow simmer over medium heat. Cover and allow to cook approximately 20 minutes or until rice is done.
  • In a separate small skillet over low heat, toast the coconut flakes until lightly browned, stirring constantly to avoid burning.
  • Add in the coconut flakes with the cooked rice and mix in lime juice and salt.
