Classic Carrot and Date Salad

Ingredients
  

  • 1/3 cup tahini
  • 1 tbsp olive oil extra virgin
  • 2 tbsp agave nectar
  • 3 tbsp lemon juice fresh
  • 1/4 tsp salt
  • 4 large carrots grated
  • 1/2 cup dates chopped
  • 3 mandarin oranges sectioned

Instructions
 

  • Mix together the tahini, olive oil, agave nectar, lemon juice and salt in a small bowl. Whisk well. Set aside.
  • In a large bowl, add the grated carrots. Then add the tahini mixture and toss well. Add dates and oranges and stir well.
  • Allow the salad to rest for approximately 1 hour to allow carrots to soften. Toss again before serving.
