  • Refrigerator


  • 3 cups tomatoes cored, cut into 1/4' pieces
  • 2 cups red bell peppers seeded, cut into 1/4' pieces
  • 1 1/2 cups cucumbers peeled, seeded, cut into 1/4' pieces
  • 1/2 cup sweet onion chopped fine
  • 1/3 cup sherry vinegar
  • 2 cloves garlic minced
  • 1 tsp sea salt
  • 1 tsp black pepper fresh cracked
  • 5 cups tomato juice fresh, no salt, sugar added or preservatives
  • 8 cubes ice
  • 1 tbsp olive oil extra virgin


  • Combine the tomatoes, bell pepper, cucumbers, onion, vinegar, garlic, salt, and black pepper in a large bowl then let stand for about 5 minutes to allow some of the juices to release.
  • Stir in the tomato juice and ice cubes then cover the bowl and place in the refrigerator for 4 hours.
  • Stir again and serve cold, with a drizzle of olive oil. Enjoy!
