Coconut and Pineapple Couscous
- 1 cup coconut milk
- 6 oz pineapple juice fresh squeezed, no added sugar or preservatives
- 1 cup couscous
- 1/2 tsp vanilla extract
- 2 tbsp agave nectar
- 1 orange peeled, divided into slices
- In a small saucepan, add coconut milk and pineapple juice. Bring to a low simmer, remove from heat and add couscous and vanilla. Mix well, cover, and allow to sit for 6-7 minutes or until couscous is cooked.
- Fluff the couscous with a fork and stir in agave. Garnish with the fresh orange slices.
