  • 3 tbsp boiling water
  • 1 tbsp flax seed ground
  • 1 1/4 cup flour no bleached flour
  • 3/4 cup cornmeal yellow
  • 1/3 cup date sugar
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 1/4 cup almond milk plain, unsweetened
  • 1/4 cup Earth Balance butter melted


  • Preheat the oven to 400 degrees with a iron skillet to heat up.
  • Combine boiling water and ground flax seed in a small bowl; let stand until cool.
  • Combine flour, cornmeal, date sugar, baking powder, and salt in a large bowl; mix well then set aside. Whisk in the almond milk and butter until well mixed then set aside.
  • Stir together the flour mixture, flax seed mixture, and milk until moistened. Open the oven door and carefully pour the batter into the hot skillet. Bake for 25 minutes or until the top is golden brown and batter comes cleanly off a toothpick when tested. Enjoy!
