Cranberry Pecan Granola

  • 3 tbsp date sugar
  • 1 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon ground
  • 1/2 tsp salt coarse
  • 6 tbsp Earth Balance butter melted
  • 3 cups rolled oats
  • 1 1/2 cups pecans coarsely chopped
  • 3/4 cup coconut shredded
  • 1/4 cup flaxseed ground
  • 1/4 cup water
  • 1/4 cup cranberries dried, LOW SUGAR


  • Preheat the oven to 350 degrees while you line a baking sheet with parchment paper.
  • Whisk date sugar, vanilla, cinnamon, salt and butter in a large bowl. Stir in oats, pecans, coconut and flax seed until evenly coated. Stir in water then spread mixture evenly on prepared sheet pan, pressing into even layer.
  • Bake for 28 to 30 minutes or until mixture is golden brown and fragrant. Cool completely then mix with the dried cranberries; spoon into a airtight container. Portion out granola as a crunchy treat with your favorite plant-based yogurt or as cereal with a plant-based milk.
