Creamy Cashew Asparagus Soup

  • 1 onion chopped
  • 4 cloves garlic minced
  • 2 tbsp olive oil extra virgin
  • 2 lbs asparagus trimmed and chopped
  • 4 cups vegetable broth ***Click on our Homemade Vegetable Broth link
  • 3/4 cup raw cashews
  • 3/4 cup water
  • 1/4 tsp sage
  • 1/4 tsp black pepper
  • 2 tsp lemon juice fresh
  • 2 tbsp nutritional yeast optional


  • In a large stock pot, saut√© onion and garlic in the olive oil until onions are soft.
  • Reduce heat. Add asparagus and vegetable broth. Cover and cook for 20 minutes. Remove from heat. Allow to slightly cool.
  • Pour mixture into a blender and blend until smooth, working in batches as needed. Return to stock pot. Keep warm over low heat.
  • Place cashews and water into blender and puree until a smooth consistency. Add to soup mixture. Mix in sage and pepper. Heat until warmed.
  • Mix in lemon juice and nutritional yeast right before serving.
