Ingredients
  

  • 2 tbsp Earth Balance Butter
  • 1/4 cup Unsweetened Soy Milk
  • 3/4 tsp Sea Salt
  • 1/4 tsp Smoked Paprika
  • 1/8 tsp Ground Nutmeg
  • 1/4 tsp Ground Cayenne
  • 1 medium Cauliflower cut into florets
  • 2 tbsp Green Onions minced

Instructions
 

  • Preheat oven to 350°F Lightly oil a 2-quart casserole pan and set aside
  • Steam cauliflower for 15 minutes until tender
  • Rinse under cold water and drain well
  • Transfer the steamed cauliflower to a food processor, and add soy milk and vegan butter until smooth
  • Add the salt, cayenne, and nutmeg, and green onions pulse until it is all blended
  • Transfer mixture to the 2-quart casserole pan and sprinkle with paprika
  • Bake for about 20 minutes and serve
