  • 1 1/2 cups raw elbow macaroni
  • water for boiling
  • 1 carrot diced small
  • 1/2 cup frozen green peas thawed
  • 1/2 cup frozen corn thawed
  • 1 cup celery diced
  • 1/2 cup Healthy Homemade Mayonnaise see recipe link
  • 1 1/2 tbsp apple cider vinegar
  • 2 tsp sugar
  • 2 tbsp pickle relish NO PRESERVATIVES
  • 1 tbsp fresh dill chopped
  • 1/8 tsp salt to taste
  • 1/8 tsp black pepper to taste


  • Cook macaroni according to package. Once cooked, drain and set aside to cool.
  • Once the macaroni is cooled, combine the macaroni, carrots, peas, corn, and celery in a large bowl. Set aside.
  • In a small bowl, combine mayonnaise, mustard, vinegar, sugar, and relish. Add to the macaroni.
  • Add in the fresh dill, salt and pepper to taste.
  • Place in the refrigerator and chill salad for 2-3 hours before serving to allow the flavors to mingle together.
