Creamy Pumpkin Sauce

  • Stove


  • 1 cup onion chopped
  • 2 cloves garlic minced
  • 2 tbsp Earth Balance Butter
  • 15 oz can pureed pumpkin
  • 1 1/2 cups soy cream NO SODIUM BENZOATE
  • 1/4 cup nutritional yeast
  • 1/2 tsp parsley dried or fresh
  • 1/8 tsp salt to taste
  • 1/8 tsp black pepper to taste


  • In a large stock pot, saut√© the onions and garlic in the olive oil until onions are soft, about 4 minutes.
  • Lower the heat to medium low and add in pumpkin and soy cream. Simmer on low for minutes, stirring frequently, until a creamy consistency.
  • Remove from heat and stir in nutritional yeast and parsley. Season with salt and pepper to taste.


Serve over Tinkyada pasta.
