Crispy Baked Sweet Potatoes

  • 1 sweet potato peeled, fry cut
  • 2 tbsp flour chickpea
  • 4 tbsp water cold
  • 4 tbsp Panko breadcrumbs
  • 3 tbsp olive oil extra virgin
  • 1/4 tsp kosher salt


  • Preheat the oven to 400 degrees while you line a baking sheet with parchment paper.
  • Mix together the flour and water to create a thick batter. Pour the breadcrumbs onto a plate then place near the batter.
  • Toss the sweet potato pieces in the olive oil then dip the pieces first into the batter, then into the breadcrumbs to coat.
  • Place onto the prepared baking sheet in a single layer; making sure none of the pieces are touching each other.
  • Bake for 25 minutes or until crisp and golden brown; tossing halfway through. Serve immediately with a sprinkle of Kosher salt. Enjoy!


Serves well with no sugar added ketchup.
