Curried Chickpea Wrap

  • 2/3 cup mayonnaise plant based
  • 2 tsp curry powder
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 1 tbsp lime juice fresh squeezed
  • 19 oz chickpeas canned, drained, rinsed
  • 1/2 cup carrots julienned
  • 1/2 cup cucumber diced
  • 1/2 cup tomato diced
  • 2 tbsp cilantro fresh, chopped
  • 1/4 cup red onion diced
  • 2 cup leafy greens chopped
  • 4 wraps large, no bleached flour


  • In a small bowl, combine the mayonnaise, curry powder, salt, garlic powder, and lime juice.
  • Put the chickpeas into a large bowl and mash them with a fork. Add the carrot, tomato, cucumber, cilantro, onion, and 4 tbsp of curry sauce; mix well.
  • Spread a small handful of leafy greens down the middle of each wrap and top with chickpea mixture and a drizzle of curry sauce. Fold and roll like a burrito.
  • Place 2 wraps in a dry skillet on medium high heat and toast seam side down first; flip and toast the other side. Plate and enjoy!
