Ingredients
  

  • 3/4 cup vegetable broth ***Click on our Homemade Vegetable Broth link
  • 1 cup coconut milk
  • 1 1/2 cup green peas fresh or frozen
  • 1 cauliflower chopped
  • 2 cups carrots diced
  • 2 tsp fresh ginger minced
  • 3 cloves garlic minced
  • 2 tsp curry powder
  • 1/2 tsp turmeric
  • 1 tsp agave nectar
  • 1/4 tsp salt
  • 1/4 tsp nutmeg
  • 1 cup pineapple diced

Instructions
 

  • In a large saucepan over medium heat, whisk together the vegetable broth and coconut milk. Add all other ingredients except the pineapple. Bring to a slow simmer, cover, and heat for 10 minutes. Stir occasionally.
  • Add in the pineapple and heat for a couple more minutes.

Notes

For a spicier taste, sprinkle with cilantro before serving.
