Curry Peanut and Spinach Soup

  • 1 onion diced
  • 3 tomatoes chopped
  • 2 tbsp olive oil extra virgin
  • 2 cups vegetable broth ***Click on our Homemade Vegetable Broth link
  • 1 cup coconut milk
  • 1/3 cup peanut butter
  • 15 oz chickpeas canned, drained
  • 1/8 tsp salt
  • 1 tsp curry powder
  • 1 tsp agave nectar
  • 1/3 tsp red pepper flakes to taste
  • 1 bunch fresh spinach


  • In a skillet, saut√© the onions and tomatoes in olive oil until onions are soft, just a couple of minutes.
  • Reduce heat to low and add remaining ingredients except spinach. Simmer, uncovered, for approximately 10 minutes. Stir occasionally.
  • Add spinach and cook for another couple more minutes, just until spinach has wilted.
  • Remove from heat and season to taste. Soup will thicken as it cools.
