"Egg" Salad Sandwich

  • 15 ounces tofu firm, drained, crumbled
  • 1/2 cup celery finely diced
  • 1/4 cup green onion minced
  • 2 tbsp parsley fresh, minced
  • 1/4 cup mayonnaise plant-based
  • 3 tbsp pickle relish sweet
  • 2 tsp lemon juice fresh squeezed, no sugar added or preservatives
  • 1 tsp mustard
  • 1/8 tsp black pepper fresh cracked
  • 8 slices bread whole wheat
  • 1 1/2 cups alfalfa sprouts fresh
  • 8 slices tomato slices


  • Combine the tofu, celery, green onions, parsley, mayonnaise, relish, lemon juice, mustard and pepper in a large bowl.
  • Toast all slices of the bread then layer four slices with the salad, sprouts and tomato slices. Top each layered piece with another slice of toast. Enjoy!
