Fennel with Sun-dried Tomatoes

  • 2 small Fennel Bulbs halved, cut into 1/4-inch pieces
  • 1 small Red Onion cut to 1/4-inch slices
  • 1/4 cup Fresh Basil shredded
  • 1/4 cup Sun-Dried Tomatoes oil-packed, cut into 1/4-inch pieces
  • 1/2 cup Kalamata Olives pitted, halved
  • 1/8 tsp Sea Salt
  • 1/8 tsp Black Pepper
  • 1 tsp Olive Oil


  • Using a large skillet heat the oil on medium heat
  • Add the onion cover and cook for about 7 minutes
  • Add the fennel and salt and pepper to taste, cover and cook for 10 minutes until tender
  • Add the sun-dried tomatoes and olives and cook uncovered for about 3 minutes stirring to blend in the flavors and serve
