"Fish" Sauce

  • 3 cups water
  • 3 tbsp salt
  • 2 tbsp soy sauce low sodium, NO SODIUM BENZOATE
  • 1/4 cup shiitake mushrooms dried, sliced


  • Simmer all of the ingredients in a large saucepan over medium heat until mixture is reduced by half; about 25-30 minutes.
  • Strain liquid through a fine mesh strainer into a medium sized bowl and allow to cool completely.
  • Place in a airtight container in the refrigerator for up to 2 months.
