Garlic and Herb Gnocchi

  • 2 large potatoes
  • 1 tsp garlic powder
  • 1/2 tsp dried basil
  • 1/2 tsp dried parsley
  • 3/4 tsp salt
  • 1 1/2 cups flour no bleached flour
  • water for boiling



  • Preheat oven to 400 degrees. Bake the potatoes for 50 minutes or until potatoes are done. Allow to cool and then peel skins.
  • Sprinkle the garlic powder, basil, parsley, and salt over the potatoes and mash the potatoes with a fork until a smooth consistency.
  • Using a large flat surface, sprinkle half of the the flour and place half of the potato mixture in the middle. Use your hands to work the flour into the potato mixture until a dough is formed. Add as much flour as needed to form the dough. Knead until smooth. Repeat with the other half of the potatoes and flour.
  • Working in batches, roll out the dough into a rope about 1 inch thick. Cut into 1 inch pieces and gently roll against a fork to make grooves in the dough.
  • Boil the gnocchi in boiling water for 2-3 minutes until they rise to the surface.
  • Pour all the Walnut and Parsley Sauce (see recipe from the sauce link in the ingredients list above) over the gnocchi and serve immediately.
