Garlic and Mushroom Miso Soup

  • 5 cups Garlic Mushroom Broth see recipe link
  • 1/2 cup shiitake mushrooms sliced
  • 1/2 cup green onions chopped
  • 1/2 cup onion chopped
  • 4 cloves garlic minced
  • 3/4 tsp garlic powder
  • 2 tbsp soy sauce low sodium, NO SODIUM BENZOATE
  • 1 tsp sesame oil
  • 1 block silken tofu diced
  • 1/3 cup miso


  • In a large stock pot, combine all ingredients except miso. Bring to a slow simmer and cook uncovered for about 10 minutes.
  • Reduce heat and add in miso. Stir well to dissolve. Be careful not to boil.
  • Continue to simmer for an additional 5 minutes until onions and mushrooms are soft.
