Garlic Quinoa

  • 1 cup onions diced
  • 4 cloves garlic minced
  • 2 tbsp Earth Balance Butter
  • 1 1/2 cups vegetable broth low sodium
  • 1 1/2 cups water
  • 1 1/2 cups quinoa
  • 1/4 tsp salt
  • 3 tbsp nutritional yeast


  • In a large skillet with a lid, saut√© onions and garlic in the butter until onions are soft.
  • Stir in vegetable broth, water, and quinoa and bring to a slow simmer. Cover and cook for 15 minutes or until liquid is absorbed.
  • Fluff the quinoa with a fork and add in the salt and nutritional yeast.
