  • 4 1/2 cups waxy potatoes peeled, thinly sliced
  • 4 tbsp olive oil extra virgin, divided
  • 9 1/2 fl oz cream plant based
  • 2 cloves garlic minced, large
  • 1/4 tsp nutmeg ground
  • 1/4 tsp salt
  • 1/4 tsp black pepper fresh cracked
  • 1/2 cup cheese plant-based


  • Preheat the oven to broil then use 1 tbsp of olive to grease a large casserole dish.
  • Put the potato slices into a large wide saucepan along with enough water to cover. Place a lid on the saucepan and bring pan to a boil then cook for 10 minutes or until easily pierced.
  • Drain off the excess water, keeping the potatoes in the pan.
  • Pour 2 tbsp of olive oil and the "cream" over the potatoes, and season well with garlic, nutmeg, salt, and pepper; mix well.
  • Transfer potato mixture into the prepared dish, ensuring the top is as level as possible. Pour remaining olive oil on top then sprinkle the "cheese".
  • Place dish in the oven to broil for 15-20 minutes or until potatoes are fork tender and cheese is crisp on top.
