Ingredients
  

  • 1 cup onion chopped
  • 3 cups zucchini squash cut into thin strips
  • 1 1/4 cups green bell pepper
  • 2 tbsp olive oil extra virgin
  • 1/2 tsp oregano
  • 1/2 tsp cumin
  • 15 oz can of black beans drained, no additives
  • 4 oz can of green chilis
  • 1 cup brown rice cooked
  • 4-6 large iceberg lettuce leaves

Instructions
 

  • Saut√© onion, zucchini, and bell pepper in the olive oil until the veggies are soft.
  • Reduce the heat to low and mix in the oregano, cumin, black beans, and green chilis. Heat through.
  • On each lettuce leaf, place about a 1/4 cup of warm cooked rice in the center. Add a couple of tablespoons of the bean mixture. Fold the lettuce end up and then roll.
