Ingredients
  

  • 1 pound fresh green beans trimmed and chopped
  • water for boiling
  • 2 tbsp olive oil extra virgin
  • 1/3 cup almonds sliced
  • 3/4 cup mushrooms sliced
  • 1/2 cup onion chopped
  • 1/2 tsp lemon juice fresh

Instructions
 

  • In a medium pan, boil the green beans for about 4 minutes. Be sure not to overcook. Remove from the stove and drain. Rinse under cold water. Set aside.
  • In a large skillet, saut√© the almonds, mushrooms, and onions over medium heat, for about 3 1/2 minutes, stirring frequently.
  • Add in green beans and lemon juice and heat for a couple more minutes.
