Place the sliced tofu pieces in a re-sealable bag and coat with the olive oil, garlic and dried mint. Press out the extra air then place on a plate in the refrigerator for 1 hour to marinate.
Heat a ridged grilling pan over high heat then lower the pieces of tofu onto the pan, pressing down slightly.
Grill for 5-9 minutes until char marks are a deep brown; flip and grill the other side for another 5-9 minutes.
Plate pieces with the tomato slices, olives, mint leaves, toasted pita pieces and tzatziki. Enjoy!
