Ingredients
  

Halloumi

  • 10 oz tofu firm, plain, drained, sliced 1/4' thick
  • 2 tbsp olive oil extra virgin
  • 1 clove garlic minced
  • 1 tsp mint dried

Serve with:

  • 2 whole tomatoes sliced
  • 1 cup Kalamata olives
  • 1/2 cup mint leaves fresh
  • 2 pieces pita bread whole wheat, toasted

Instructions
 

  • Place the sliced tofu pieces in a re-sealable bag and coat with the olive oil, garlic and dried mint. Press out the extra air then place on a plate in the refrigerator for 1 hour to marinate.
  • Heat a ridged grilling pan over high heat then lower the pieces of tofu onto the pan, pressing down slightly.
  • Grill for 5-9 minutes until char marks are a deep brown; flip and grill the other side for another 5-9 minutes.
  • Plate pieces with the tomato slices, olives, mint leaves, toasted pita pieces and tzatziki. Enjoy!
