Preheat the oven to 350 degrees while you line a 8.5 x 11 casserole dish with parchment paper.
Cook the stuffing according to the directions on the package. Set aside to cool once done.
In a large bowl mix together your mixed veggies, peas, corn, chickpeas, sage, thyme, salt, rosemary, and black pepper. Spread the mixture evenly in your lined casserole dish.
Top the veggies with gravy to make sure everything is covered, then put the stuffing across the top. Smooth the stuffing with a spatula so that it forms a uniform covering for the veggies underneath.
Cover with foil, place the pan on a baking sheet to catch anything that might bubble over and bake for 45 minutes. Uncover, then bake another 15 minutes. Enjoy!
