Holiday Stuffing Casserole

  • 10 oz plant-based stuffing bagged
  • 2 cups California Mix frozen
  • 1/2 cup green peas canned, drained, rinsed, no salt added
  • 1/2 cup corn kernels canned, drained, rinsed, no salt added
  • 2 cups chickpeas canned, drained, rinsed, slightly smashed
  • 1 tsp rubbed sage dried
  • 1 tsp thyme dried
  • 1 tsp salt
  • 1/2 tsp rosemary dried
  • 1/4 tsp black pepper fresh cracked
  • 3 cups plant-based gravy *see our Creamy Golden Gravy recipe link


  • Preheat the oven to 350 degrees while you line a 8.5 x 11 casserole dish with parchment paper.
  • Cook the stuffing according to the directions on the package. Set aside to cool once done.
  • In a large bowl mix together your mixed veggies, peas, corn, chickpeas, sage, thyme, salt, rosemary, and black pepper. Spread the mixture evenly in your lined casserole dish.
  • Top the veggies with gravy to make sure everything is covered, then put the stuffing across the top. Smooth the stuffing with a spatula so that it forms a uniform covering for the veggies underneath.
  • Cover with foil, place the pan on a baking sheet to catch anything that might bubble over and bake for 45 minutes. Uncover, then bake another 15 minutes. Enjoy!
