Ingredients
  

  • 1 red onion diced
  • 3 cloves garlic minced
  • 1 pound collard greens cleaned, trimmed and chopped
  • 2 tbsp olive oil extra virgin
  • 3/4 cup vegetable broth ***Click on our Homemade Vegetable Broth link
  • 14 oz can diced tomatoes drained
  • 1 1/2 tsp Cajun seasoning
  • 1/2 tsp hot sauce to taste
  • 1/4 tsp salt to taste

Instructions
 

  • In a large skillet over medium heat, saut√© onions, garlic, and collard greens in the olive oil until onions are soft, about 4 minutes.
  • Reduce heat to medium low and stir in vegetable broth, tomatoes, and Cajun seasoning. Bring to a slow simmer. Cover and allow to cook for 20 minutes, or until greens are soft, stirring frequently.
  • Remove cover. Add in hot sauce and salt and continue to cook uncovered for another 2 months, allowing excess liquid to evaporate.
