Ingredients
  

  • 29 oz great northern beans (2 cans)canned, drained and rinsed
  • 2 stalks celery diced
  • 1/4 cup fresh parsley chopped
  • 1/4 cup fresh basil chopped
  • 3 tbsp olive oil extra virgin
  • 3 tomatoes chopped
  • 1/2 cup black olives sliced
  • 2 tbsp lemon juice fresh
  • 1/8 tsp salt to taste
  • 1/8 tsp black pepper to taste
  • 1/4 tsp crushed red pepper flakes

Instructions
 

  • Combine beans, celery, parsley, and basil into a large skillet with olive oil. Cook on low heat for about 3 minutes, until the parsley and basil are just slightly cooked.
  • Transfer the beans mixture into a large bowl and add remaining ingredients, gently tossing.
  • Refrigerate for at least an hour before serving.
