Indian Orange and Cranberry Couscous

  • Stove


  • 2 cups water
  • 1 1/2 cups couscous
  • 1/2 cup orange juice fresh squeezed, no added sugar or preservatives
  • 1 cup onion chopped
  • 2 tbsp olive oil extra virgin
  • 1/2 tsp coriander powder
  • 1 tsp curry powder
  • 3/4 cups green onions chopped
  • 3/4 cup cranberries
  • 3/4 cup almonds sliced


  • In a large saucepan with a lid, bring the water to a boil. Stir in couscous and remove from the heat. Mix in the orange juice, cover, and let sit for about 15 minutes or until most of the liquid has been absorbed and couscous is soft.
  • In a small skillet, saut√© onions in the olive oil for about 2 minutes or until onions are soft. Mix in spices and warm for 2 more minutes.
  • Stir the onions into the couscous and add the green onions, cranberries and almonds.
