"Leeky" Potatoe Soup

  • 1 yellow onion diced
  • 2 cloves garlic minced
  • 2 tbsp olive oil extra virgin
  • 6 cups vegetable broth ***Click on our Homemade Vegetable Broth link
  • 3 leeks sliced
  • 2 large potatoes chopped
  • 2 bay leaves
  • 1 cup soy milk NO SODIUM BENZOATE
  • 2 tbsp Earth Balance Butter
  • 1/8 tsp salt to taste
  • 1/2 tsp black pepper to taste
  • 1/2 tsp sage
  • 1/2 tsp thyme
  • 2 tbsp nutritional yeast optional


  • In a skillet, saute onions and garlic in the olive oil until onions are soft.
  • Add vegetable broth, leeks, potatoes, and bay leaves. Bring to a simmer. Cover and allow to cook for 30 minutes or until potatoes are soft, stirring occasionally.
  • Remove bay leaves. Pour mixture into a large bowl.
  • Working in batches, puree soup in a blender until smooth or desired consistency. Pour pureed soup back into the stock pot.
  • Add remaining ingredients and reheat soup.
