Lentil Bolognese

  • 2 tbsp olive oil extra virgin
  • 1 cup onion chopped
  • 1/2 cup celery chopped
  • 2 cloves garlic minced
  • 1 tsp salt
  • 1/2 tsp oregano dried
  • 1/8 tsp red pepper flakes
  • 3 tbsp tomato paste
  • 1/4 cup water
  • 28 oz tomato canned, crushed
  • 14 oz tomato canned, diced
  • 1 cup lentils dried, rinsed, sorted
  • 1 cup portobello mushroom gills removed, finely chopped
  • 1 1/2 cups vegetable broth *see our Homemade Bouillon recipe link
  • 6-8 servings pasta whole wheat, brand: Tinkyada Pasta Joy


  • Heat olive oil in a large saucepan over medium heat then saute the onion, carrots, and celery for about 10 minutes.
  • Stir in the garlic, salt, oregano, red pepper flakes, tomato paste, water, crushed tomatoes, diced tomatoes, lentils, mushrooms, and vegetable broth; bring to a simmer.
  • Reduce heat to medium; partially cover and continue to simmer for 20 minutes. Remove the cover and cook for another 20 minutes. Serve over your favorite whole wheat pasta. Enjoy!
