"Meatballs"

Ingredients
  

  • 3 cloves garlic roughly chopped
  • 1 cup red onion roughly chopped
  • 1 1/2 cups kidney beans canned, rinsed, drained
  • 1/3 cup rolled oats no bleached oats
  • 1 tsp basil dried
  • 1 tsp oregano dried
  • 3/4 tsp salt
  • 1/2 cup breadcrumbs no bleached flour, divided
  • 2 tbsp olive oil extra virgin

Instructions
 

  • In a pan with the olive oil over medium to high heat; caramelize the garlic and onions for about 5 min.
  • Place the garlic and onions mix into a food processor along with the kidney beans, oats, spices and a 1/4 cup breadcrumbs. Pulse until it thoroughly mixed, scraping down the sides if needed. Mixture should stick together if you pick up small tablespoon worth.
  • Shape the mixture into 36 "meatballs" and coat in breadcrumbs. Once formed place on a pan lined with parchment paper and place in freezer for at least 2 hours until frozen. Once frozen place in a airtight container and they will keep in the freezer for up to 3 months. Take out any number for all kinds of fun recipes.
