Ingredients
  

  • 2 medium eggplants
  • 3 tbsp olive oil extra virgin, divided
  • 2 tbsp lemon juice
  • 1/4 cup tahini check to make sure it says gluten-free on the label
  • 3 cloves garlic
  • 1/2 tsp cumin
  • 1/2 tsp chili powder optional
  • 1/4 tsp salt
  • 1 tbsp chopped fresh parsley

Instructions
 

  • Preheat the oven to 400 degrees. Slice and place eggplants in halves and place on a baking sheet. Fork several times.
  • Drizzle approximately 1 tbsp of olive oil on eggplant halves. Back for 30 minutes or until soft. Allow to cool a little.
  • Remove inner flesh and place in a bowl.
  • Mash eggplant together with remaining ingredients until somewhat smooth. Season to taste.
