Ingredients
  

  • 15 oz can of black beans
  • 3/4 cup salsa
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1/2 cup frozen corn
  • 2 cups brown rice cooked
  • 1/2 cup grated plant-based cheese
  • 1/3 cup black olives sliced

Instructions
 

  • Preheat the oven to 350 degrees.
  • Partially mash the black beans with a fork.
  • In a large stock pot over low heat, combine the beans, salsa, chili powder, and cumin about 5 minutes.
  • Remove from heat and add in corn and cooked rice. Transfer mixture to a casserole dish.
  • Spread the plant-based cheese and olives over the top and back for 20 minutes.
