Ingredients
  

  • 2 cloves garlic minced
  • 1 cup brown rice
  • 2 tbsp olive oil extra virgin
  • 3 cups vegetable broth low sodium
  • 4 large tomatoes pureed
  • 1 green bell pepper chopped
  • 1 red bell pepper chopped
  • 1 cup frozen corn
  • 1 carrot diced
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/3 tsp oregano
  • 1/3 tsp cayenne pepper to taste
  • 1/8 tsp salt to taste

Instructions
 

  • In a large skillet with a lid, saut√© garlic and rice on medium high heat for approximately 3 minutes or until rice is toasted.
  • Reduce heat to medium and add in remaining ingredients. Bring to a slow simmer, cover, and cook until rice is done and liquids are absorbed, approximately 23 minutes. . Stir occasionally.
