  • 3 oz clear bean thread noodles package
  • 1 cup hot water
  • 1 tbsp soy sauce Low sodium, NO SODIUM BENZOATE
  • 1/2 tsp powdered ginger
  • 1 tsp sesame oil
  • 1/4 cup shiitake mushrooms diced
  • 1 carrot grated
  • 10 spring roll wrappers
  • warm water
  • 1/2 head green leaf lettuce chopped
  • 1 cucumber thinly sliced
  • 1 bunch fresh mint


  • In a large bowl with the hot water, break up the noodles into small pieces and submerge. Allow noodles to soften, usually about 6-7 minutes, then drain.
  • In a different bowl, toss together the hot noodles with soy sauce, ginger, sesame oil, mushrooms, and carrots. Mix well.
  • In a large shallow pan, briefly dip the spring roll wrappers until soft (one at a time). Immediately add a small bit of lettuce and approximately 2 tablespoons of noodle mixture to the center of the wrapper. Add a couple of thinly sliced cucumbers and place 2-3 fresh mint leaves on top.
  • Gently fold the bottom of the wrapper over the filling and then fold the sides in and roll.
