Preheat you waffle iron then brush with part of the melted 2 tablespoons of butter.
Combine boiling water and flax seed in a small bowl. Set aside.
Whisk flour, date sugar, baking powder, and salt in a large bowl. Whisk soy milk, 1/4 cup melted butter, and flax seed mixture in a separate medium sized bowl.
Add the soy milk mixture into the flour mixture; whisk until just blended. Stir in the pecans.
For each waffle, pour a 1/2 cup of batter into the waffle iron. Close lid and bake until steaming stops. Serve with any remaining melted butter and date syrup. Enjoy!
