Pecan Waffles

  • Waffle Iron


  • 6 tbsp boiling water
  • 2 tbsp flax seed ground
  • 2 tbsp date sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 2 cups soymilk
  • 1/4 cup Earth Balance butter melted
  • 2 tbsp Earth Balance butter melted, divided
  • 3/4 cup pecans toasted, chopped
  • 1/4 cup date syrup divided


  • Preheat you waffle iron then brush with part of the melted 2 tablespoons of butter.
  • Combine boiling water and flax seed in a small bowl. Set aside.
  • Whisk flour, date sugar, baking powder, and salt in a large bowl. Whisk soy milk, 1/4 cup melted butter, and flax seed mixture in a separate medium sized bowl.
  • Add the soy milk mixture into the flour mixture; whisk until just blended. Stir in the pecans.
  • For each waffle, pour a 1/2 cup of batter into the waffle iron. Close lid and bake until steaming stops. Serve with any remaining melted butter and date syrup. Enjoy!
