Ingredients
  

  • 1 1/2 cups plant-based plain yogurt
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 4 cloves garlic minced
  • 2 cucumbers grated or finely chopped.
  • 1 tbsp fresh mint or fresh dill chopped

Instructions
 

  • In a medium bowl, whisk together the yogurt, olive oil, and lemon juice until well mixed.
  • Add in remaining ingredients.
  • Place in refrigerator for at least 1 hour. Serve cold.
