Potato Green Bean Stew

  • 2 tbsp olive oil extra virgin
  • 1/4 cup onion chopped
  • 2 cloves garlic minced
  • 2 cups vegetable broth ***Click on our Homemade Vegetable Broth link
  • 2 cups winter squash diced
  • 2 cups potatoes diced
  • 15 oz chickpeas canned, drained, rinsed
  • 1 leaf bay
  • 2 cups green beans halved
  • 1/2 tsp salt
  • 1/2 tsp black pepper fresh cracked


  • Heat the oil in a large pot over medium heat. Saute the onion and garlic for about 7 minutes.
  • Add in the broth, squash, potatoes, chickpeas and bay leaf; then turn up the heat to high to bring the pot to almost boiling.
  • Cover and reduce the heat to low and simmer until the potatoes are tender, about 16 to 20 minutes.
  • Uncover the pot and stir in the green beans and cook until they are tender. Ladle into individual bowls and sprinkle salt and pepper to taste.
