Quick and Easy Tofu Breakfast Burrito

  • 10 oz firm or extra firm tofu well pressed
  • 2 tbsp olive oil extra virgin
  • 1/2 cup salsa
  • 1/2 tsp chili powder
  • 2 tortillas no bleached flour, warmed
  • 2 slices plant-based cheese
  • 1/2 avocado sliced
  • 1/8 tsp black pepper
  • 1/8 tsp salt
  • ketchup or hot sauce to taste


  • Crumble the tofu unto large 1 inch chunks or cut with knife.
  • Over medium heat, saut√© the tofu in the olive oil for 2-3 minutes.
  • Stir in the salsa and chili powder, cooking for another 2-3 minutes. Continuing to stir, add in the salt and pepper.
  • After warming each tortilla, fill each with the cooked tofu mixture. Spice up with hot sauce or ketchup.
  • Add the cheese and avocado slices and roll into a burrito.
