Quinoa "Rice" Pudding

  • 1 cup quinoa
  • 2 cups water
  • 2 cups soy cream NO SODIUM BENZOATE
  • 2 tbsp agave nectar
  • 1 tsp cornstarch
  • 2 bananas thinly sliced
  • 1/2 tsp vanilla extract
  • 1/3 cup raisins
  • 1/8 tsp cinnamon


  • In a large stock pot with a lid, bring quinoa and the water to a simmer over medium heat, cover, and cook for 12 minutes or until liquid has been absorbed.
  • Reduce heat to medium low and stir in the soy cream, agave, cornstarch, and bananas. Stir constantly to keep bananas from sticking until pudding has thickened.
  • Add in the vanilla and raisins and mix well. Sprinkle with cinnamon before serving.
