Rice Pudding with Fresh Fruit
- 1 1/2 cups almond milk unsweetened
- 2 pieces dates thinly sliced
- 1/2 cup brown rice short grain
- 1 cup apples chopped small
- 1 cup banana chopped small
- 1/4 tsp cinnamon ground
- Boil the rice in the almond milk for about 25 minutes until the rice is soft.
- Add the rice pudding to a bowl and top it off with the apples, banana and dates, sprinkle with cinnamon, enjoy!
Tip: Add a tablespoon a ground flaxseeds or chia for a extra boost.
