Roasted Brussel Sprouts and Apples

  • 2 cups Brussel sprouts chopped into quarters
  • 8 whole cloves of garlic peeled
  • 2 tbsp olive oil extra virgin
  • 2 tbsp balsamic vinegar
  • 1/2 tsp salt to taste
  • 1/2 tsp black pepper
  • 2 apples cored and chopped


  • Preheat the oven to 425 degrees.
  • On a baking sheet covered in foil, spread out the Brussel sprouts and garlic into a single layer. Drizzle the olive oil and balsamic vinegar and sprinkle the salt and pepper over the veggies. Roast for 12 minutes, tossing at least once.
  • Remove baking sheet from oven and mix in apples, tossing gently. Roast for an additional 10 minutes or until apples are soft, tossing at least once.
