Roasted Sweet Potato and Apple Salad

  • 4 cups sweet potato peeled, cubed
  • 2 tbsp olive oil extra virgin, divided
  • 3/4 tsp salt divided
  • 1/4 tsp black pepper fresh cracked
  • 3 tbsp apple juice fresh squeezed, no sugar added or preservatives
  • 1 tbsp Dijon mustard
  • 1 tbsp agave nectar
  • 2 tsp chives fresh, snipped
  • 1 cup Honey crisp apple diced
  • 1/2 cup celery finely chopped
  • 1/4 cup red onion thinly sliced
  • 8 leaves lettuce


  • Preheat the oven to 400 degrees while you line a baking sheet with parchment paper.
  • Place the sweet potatoes in a large bowl and toss with 1 tablespoon of olive oil and sprinkle with 1/4 tsp of salt and pepper.
  • Spread on the prepared baking sheet in a single layer and roast for 26 to 30 minutes. Toss halfway through cooking time then once cooked allow to cool completely before use.
  • Whisk together 1 tbsp olive oil, apple juice, vinegar, mustard, agave, chives and remaining salt in a small bowl until well blended.
  • Combine sweet potatoes, apple, celery, and onion in a medium sized bowl. Drizzle with the dressing then gently toss to coat. Serve on lettuce leaves and enjoy!
